Spicy Garlic Shrimp with Quinoa
Ingredients:
- 200g of shrimp, peeled and deveined
- 1 cup of quinoa
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- ½ teaspoon of chili flakes
- Salt to taste
- Pepper to taste
- 2 cups of vegetable broth
- 2 tablespoons of chopped parsley for garnish

- Serving plates
Instructions:
- Rinse the quinoa under cold water and drain.
- In a pot, bring the vegetable broth to a boil and add the quinoa. Reduce to a simmer, cover, and cook for about 15 minutes or until the liquid is absorbed and quinoa is fluffy.
- While the quinoa cooks, heat olive oil in a frying pan over medium heat.
- Add minced garlic to the pan and sauté for 1 minute until fragrant.
- Add the shrimp, paprika, chili flakes, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the shrimp are pink and cooked through.
- Fluff the quinoa with a fork and serve it on plates, topped with the spicy garlic shrimp.
- Garnish with chopped parsley for added flavor.
