Spicy Garlic Shrimp with Quinoa


Spicy Garlic Shrimp with Quinoa

Ingredients:

  • 200g of shrimp, peeled and deveined
  • 1 cup of quinoa
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • ½ teaspoon of chili flakes
  • Salt to taste
  • Pepper to taste
  • 2 cups of vegetable broth
  • 2 tablespoons of chopped parsley for garnish

  • Frying pan
  • Pot
  • Measuring cups
  • Cooking spoon
  • Serving plates

Instructions:

  • Rinse the quinoa under cold water and drain.
  • In a pot, bring the vegetable broth to a boil and add the quinoa. Reduce to a simmer, cover, and cook for about 15 minutes or until the liquid is absorbed and quinoa is fluffy.
  • While the quinoa cooks, heat olive oil in a frying pan over medium heat.
  • Add minced garlic to the pan and sauté for 1 minute until fragrant.
  • Add the shrimp, paprika, chili flakes, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  • Fluff the quinoa with a fork and serve it on plates, topped with the spicy garlic shrimp.
  • Garnish with chopped parsley for added flavor.
