Sweet Potato Tilapia Bowl

Ingredients:

  • 2 medium sweet potatoes
  • 200g of rice
  • 300g of tilapia fillets
  • 1 can of mixed canned vegetables
  • 100g of kale

Kitchen Tools Needed:

  • Oven
  • Microwave Oven
  • Blender
  • Air Fryer
  • Stove Top

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Peel and cube the sweet potatoes, then toss them in olive oil and season with salt and pepper.
  • Spread the sweet potatoes on a baking tray and roast in the preheated oven for about 25-30 minutes until tender and slightly caramelized.
  • While the sweet potatoes are roasting, cook the rice according to package instructions, usually around 15-20 minutes.
  • Season the tilapia fillets with your favorite spices (like garlic powder, paprika, salt, and pepper). Heat the air fryer to 180°C (350°F) and cook the tilapia for about 10-12 minutes or until cooked through.
  • In a saucepan, heat the canned vegetables over medium heat for 5-7 minutes until warmed through. Stir in the chopped kale and allow to wilt for about 2-3 minutes.
  • Once everything is cooked, assemble the bowl by layering the rice at the bottom, followed by the roasted sweet potatoes, grilled tilapia, and topped with the warm canned vegetables and kale.
